I don’t know what it is but the whole grain bread at Panera is GREAT, but you have to be careful. I think some Panera’s OVERCOOK the bread. The top part where it makes that indentation has sharp edges. I have cut my mouth 3 times in the last two weeks.
Its not a bid deal but I go to alot of different Panera’s throughout New York and when I am away on business in Westchester, Colorado and California and sometimes in Texas.


OMG this is too funny! This happened to me and at a location in New York and I thought I was the only one that noticed!
So don’t eat the bread.
Dont they know at Panera Bread that overcooked whole grain bread can become dry and have a very dark crust.
